Slow-Cooked Beef & Sweet Piquanté Pepper Ragu Pasta Recipe
Try this slow-cooked Beef Ragu Pasta recipe for your next dish when entertaining. Flavoursome tender beef slow cooked for 3 hours in an indulgent red wine sauce.

Ingredients
3 carrots, grated
2 red onions, chopped
4 cloves garlic, crushed
3 Tbsp olive oil
2 Tbsp tomato paste
500 g Ragu pasta
½ jar PEPPADEW® Sweet Piquanté Peppers Mild Chopped or Hot Slices
1 sprig rosemary
2 bay leaves
1 Tbsp dried mixed herbs
1 x 400g chopped tomatoes
600 g beef shin
3 cups beef stock
2 cups red wine

Method
- In a heavy bottom casserole dish, sauté the carrots, onions, garlic in the oil until softened.
- Add PEPPADEW® Sweet Piquanté Peppers, herbs and tinned tomato. Sim-mer for 10 minutes.
- Add the beef, stock and wine, and cover, simmer for 3 hours until the meat is broken up and the sauce reduced.
- Garnished with extra PEPPADEW® Sweet Piquanté Peppers over ragu pasta.
