Mashed Potato & Bacon Jalapeño Poppers

Ingredients
4 rashes streaky bacon
100 g (3.5 oz) cooked and mashed potatoes
15 ml (1 tbsp) mayonnaise
100 g (3.5 oz) cheddar cheese, grated
50 g (1.8 oz) mozzarella cheese, grated
15 ml (1 tsp) fresh parsley or chives, finely chopped
Salt and milled black pepper
10 – 12 PEPPADEW® Jalapeño Cones

Method
Grill the bacon until crispy and chop into small pieces. Place the mashed potatoes into a mixing bowl and add the mayonnaise, cheddar and mozzarella cheeses, parsley and bacon bits. Mix well to combine and season with salt and pepper. Stuff the PEPPADEW® Jalapeños Cones with the mashed potato filling. Arrange the PEPPADEW® Jalapeños in a single layer on a baking sheet and bake for 7-10 minutes at 180°C. Serve warm with a Ranch-style or sour cream dressing.
