This easy Lamb Koftas recipe is a delicious dinner idea or an exotic starter. Serve this exquisite Middle Eastern dish with a Greek salad, Tzatziki & pita bread.
12 bamboo skewers soaked in cold water
800 g lamb mince
1 small red onion, chopped
2 garlic cloves, crushed
50 g PEPPADEW® Sweet Piquanté Peppers Mild Chopped or Hot Slices50 g pine-nuts
1 tablespoon chopped fresh mint leaves
1 tablespoon chopped fresh flat-leaf parsley leaves
2 teaspoons mild paprika or preferably smoked paprika
2 teaspoons ground cumin
1 teaspoon ground coriander
- Place all the ingredients into a bowl and mix together until well combined.
- With wet hands, shape into equal size cigars and thread 1 sausage onto each skewer. Place on a large baking tray. Cover. Refrigerate for 20 minutes or until firm.
- Heat a griddle on high. Add kofta’s. Reduce heat to low. Cook, turning occasionally, for 10 minutes or until cooked through. Transfer to a large baking tray. Cover with foil. Rest for 5 minutes.
Serve with Greek salad, Tzatziki and pita bread.
