This Honeyed Sausage Tray Bake Recipe is a quick and easy dinner for busy weeknights, that’s incredibly tasty with only one dish to wash up! Only 10min prep time.
1 Tbsp olive oil
2 Tbsp honey
½ small pack thyme, leaves picked
1 tsp cumin seeds
2 tsp verjuice or white wine vinegar
2 large orange or white sweet potato, cut into wedges, peeled and cut into 3 cm chunks
2 red onions, cut into wedges
8 pork sausages
½ jar PEPPADEW® Sweet Piquanté Peppers Hot or Mild Whole
3 apples, cut into wedges and cored
- Heat oven to 200°C.
- Mix the oil, honey, thyme, cumin and verjuice together with seasoning. Toss the sweet potato and onions in the honey mix, then spread out in a large roasting tin and roast in the oven for 15 mins.
- Add the sausages, PEPPADEW® Sweet Piquanté Peppers Whole and apple wedges, and cook for 30-45 mins, stirring halfway through, until the vegetables are soft and caramelised, and the sausages are cooked through.
- Serve with long stem broccoli.
