This Hake & PEPPADEW® Sweet Piquanté Pepper Traybake is quick & easy family dinner recipe with only one dish to wash up! Ready in 20 minutes, perfect for busy weeknights.
4 x 150 g firm white fish
200 g PEPPADEW® Sweet Piquanté Peppers Mild/Hot Whole, drained
200 g mixed cocktail tomatoes
Small handful mixed olives
2 tablespoons capers, drained
2 cloves garlic crushed
1 preserved lemon, chopped (optional)
100 ml good quality olive oil
Sea salt & black pepper
To serve, 2 tablespoons pesto & torn basil leaves
- Preheat the oven to 200°c
- Place the fish fillets in a baking dish, scatter around the PEPPADEW® Sweet Piquanté Peppers Mild/Hot Whole, tomatoes, olives, capers, garlic, and lemon. Drizzle with the olive oil, and season.
- Bake in the oven for 10 – 15 minutes until the fish flakes easily when pressed with a fork.
- To serve, garnish with dollops of pesto, and torn basil leaves. Serve with cauli – rice or a fresh baguette to mop up the juices.
